These easy puff pastry bites combine creamy brie cheese and tart cranberry sauce for a shatteringly crisp, gooey appetizer that is perfect for holidays or last-minute snacking.

  • 1 sheet frozen puff pastry, thawed
  • 8 oz wheel of brie cheese, cut into 20–24 small cubes
  • 1/2 cup cranberry sauce or jam (whole berry preferred)
  • 1 large egg
  • 1 tablespoon water
  • Optional: Thinly sliced prosciutto or fresh thyme leaves

Instructions

  1. Preheat oven to 400°F (200°C) and line two large baking sheets with parchment paper.
  2. Roll the thawed puff pastry on a lightly floured surface into a large square about 1/8 inch thick.
  3. Cut the pastry into 2-inch squares (yielding approximately 20-24 squares).
  4. Place a cube of brie in the center of each square, topped with 1 teaspoon of cranberry sauce.
  5. Fold opposite corners of the square to the center to create an envelope shape, pressing edges to seal.
  6. Place assembled bites on the baking sheets and chill in the refrigerator for 10-15 minutes.
  7. Whisk the egg with 1 tablespoon of water to create an egg wash.
  8. Brush the tops of the chilled bites generously with the egg wash.
  9. Bake for 15-18 minutes, rotating pans halfway through, until puffed and deep golden brown.
  10. Cool on the baking sheet for 5 minutes before serving warm.

Notes

Keep the pastry cold to ensure flaky layers. Do not overfill the bites to prevent bursting. If using runny cranberry sauce, simmer it to thicken first. For best results, chill the assembled bites before baking to help them hold their shape.
