  • 68 slices prosciutto, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • Freshly ground black pepper, to taste
  • Sea salt, a light sprinkle (optional)
  • Juice of half a lemon
  • Optional: red pepper flakes for heat
  • Optional: grated Parmesan for garnish

Instructions

  1. Rinse and trim the woody ends of about 1 pound of asparagus. Pat dry with a kitchen towel to remove excess moisture.
  2. Group 3-4 asparagus spears into small bundles. Wrap each bundle tightly with one slice of prosciutto, spiraling from one end to the other. Secure with kitchen twine or toothpicks if needed.
  3. Lightly brush each bundle with 2 tablespoons of extra virgin olive oil, ensuring even coverage. Sprinkle freshly ground black pepper over the bundles.
  4. Preheat grill or grill pan to medium-high heat (about 400°F). Clean and lightly oil the grates or pan to prevent sticking.
  5. Place asparagus bundles on the grill. Turn every 2 minutes using tongs to brown all sides evenly. Grill for 6-8 minutes until prosciutto is crispy and slightly charred, and asparagus is tender but bright green.
  6. Remove bundles from grill and let rest for 1-2 minutes. Squeeze fresh lemon juice over the top just before serving.

Notes

Use thinly sliced prosciutto for best crispiness. Pat asparagus dry to avoid soggy prosciutto. Turn bundles often to prevent burning. If no grill is available, bake at 425°F for 12-15 minutes, flipping halfway. Store leftovers in airtight container refrigerated up to 2 days; reheat in oven to restore crispness. Avoid microwaving.
