A festive, pumpkin-shaped platter of air-fried or baked bell peppers, carrots, and broccoli that offers a crunchy, flavorful alternative to traditional raw veggie trays.

  • 2 large red bell peppers
  • 1 bunch medium carrots
  • 1 large head broccoli
  • 1 medium green cucumber
  • 1 cup cherry tomatoes (optional)
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika

Instructions

  1. Preheat oven to 400°F (200°C) or air fryer to 380°F (190°C).
  2. Wash and dry all vegetables thoroughly to ensure crispiness.
  3. Cut red bell peppers in half lengthwise, remove seeds, and pat dry.
  4. Toss pepper halves with 1 tablespoon olive oil and half of the spices (garlic powder, onion powder, salt, pepper, smoked paprika).
  5. Wash, peel, and trim carrots. Toss with 1 tablespoon olive oil and remaining spices.
  6. Cut broccoli into medium florets and toss with remaining 1 tablespoon olive oil and a pinch of salt.
  7. Arrange peppers skin-side down on a parchment-lined baking sheet or in the air fryer basket. Place carrots and broccoli around them without overcrowding.
  8. Cook for 10-12 minutes in the oven or 8-10 minutes in the air fryer until edges are browned and tender-crisp.
  9. Assemble the pumpkin shape on a platter: arrange pepper halves in a circle, place carrots upright in the center as the stem, and arrange broccoli around the base as leaves.
  10. Scatter cherry tomatoes around the platter if using and serve immediately with dip.

Notes

Ensure vegetables are completely dry before seasoning to prevent steaming. Do not overcrowd the pan to allow for proper crisping. Red bell peppers are recommended for the pumpkin color and sweetness. Serve with ranch, buffalo, or garlic aioli dip.
