Instructions

  1. Prepare the Filling (10 minutes): In a medium mixing bowl, combine softened cream cheese, shredded cheddar, finely chopped jalapeños, garlic powder, smoked paprika, and salt. Mix until smooth and evenly blended. Fold in chives or green onions if using.
  2. Prepare Your Workspace (5 minutes): Lay out egg roll wrappers on a clean, dry surface. Keep a small bowl of water nearby to seal edges when rolling. Heat oil to about 350°F (175°C) in a deep fryer or heavy skillet.
  3. Fill and Roll the Egg Rolls (15-20 minutes): Place about 2 tablespoons of filling near the bottom corner of each wrapper. Fold corner over filling, then fold in sides snugly. Roll upwards tightly and seal with a dab of water. Avoid overfilling.
  4. Heat the Oil: Heat about 2 inches (5 cm) of vegetable oil to 350°F (175°C). Test by dropping a small piece of wrapper; it should bubble and rise immediately.
  5. Fry the Egg Rolls (3-4 minutes per batch): Fry a few egg rolls at a time without overcrowding. Turn occasionally until golden brown and crispy. Remove with tongs or slotted spoon and drain on paper towels.
