These crispy parmesan zucchini fritters are quick and easy to make, featuring a golden crust and a fresh garlic herb dip that complements the cheesy, tender fritters perfectly.

  • 3 medium zucchinis, grated (about 4 cups)
  • ½ cup finely grated Parmesan cheese (Parmigiano-Reggiano recommended)
  • ½ cup all-purpose flour (can substitute with almond flour for gluten-free option)
  • 2 large eggs, at room temperature
  • 2 cloves garlic, minced
  • 2 tablespoons chopped parsley
  • 1 tablespoon chopped chives
  • Salt and pepper to taste
  • Olive oil for frying
  • ½ cup Greek yogurt
  • 1 tablespoon fresh lemon juice

Instructions

  1. Grate the zucchini using a box grater or food processor to yield about 4 cups (approximately 500 grams).
  2. Place grated zucchini in a clean kitchen towel or cheesecloth and wring firmly over the sink to remove as much water as possible (3-4 minutes).
  3. In a large bowl, combine the dried zucchini, grated parmesan, flour, eggs, salt (about ½ teaspoon), and pepper (¼ teaspoon). Stir until well incorporated and thick enough to hold shape.
  4. Heat a non-stick skillet over medium heat and add 2 tablespoons of olive oil. Warm the oil for 2 minutes until shimmering but not smoking.
  5. Scoop about 2 tablespoons of batter per fritter and gently flatten into round patties. Place carefully into hot oil and cook for 3-4 minutes per side until golden brown and crispy. Fry in batches without overcrowding the pan.
  6. Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
  7. While fritters cook, mix Greek yogurt, minced garlic, chopped parsley and chives, lemon juice, salt, and pepper in a small bowl. Stir well and refrigerate until serving.
  8. Serve fritters warm with a generous dollop of garlic herb dip and garnish with extra herbs if desired.

Notes

Squeeze out zucchini moisture thoroughly to avoid soggy fritters. Use moderate oil heat to prevent burning or greasiness. Let batter rest 5-10 minutes before frying for better texture. For gluten-free, substitute flour with almond or gluten-free flour. To keep fritters crispy when reheating, use an oven instead of microwave.
