These crispy strawberry cream cheese stuffed French toast roll-ups are a quick and easy brunch treat featuring a crispy exterior and a warm, gooey cream cheese and strawberry filling.

  • 8 slices white sandwich bread, crusts removed
  • 4 oz cream cheese, softened
  • 1 cup fresh strawberries, hulled and thinly sliced
  • 1/2 teaspoon vanilla extract (optional)
  • 2 large eggs, beaten
  • 1/4 cup whole milk
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons unsalted butter, for frying
  • Powdered sugar, for dusting (optional)
  • Maple syrup or honey, for serving

Instructions

  1. Lay out bread slices and trim off crusts. Use a rolling pin to gently flatten each slice (about 5 minutes).
  2. In a small bowl, combine softened cream cheese and vanilla extract until smooth. Spread about 1 tablespoon evenly over each flattened bread slice.
  3. Place 2-3 thin strawberry slices lengthwise along the cream cheese spread on each slice.
  4. Starting from one short edge, roll each slice into a tight cylinder. Press gently to seal the edge, using a little cream cheese if needed.
  5. In a medium bowl, whisk together eggs, milk, sugar, cinnamon, and salt until fully combined and slightly frothy.
  6. Dip each roll-up into the egg batter, turning to coat all sides evenly. Let excess drip off.
  7. Heat butter over medium heat in a skillet until foaming but not browned. Add roll-ups seam side down first. Cook 2-3 minutes per side until golden brown and crispy, turning carefully.
  8. Place cooked roll-ups on a plate, dust with powdered sugar if desired, and serve warm with maple syrup or honey.

Notes

Remove crusts and flatten bread to prevent tearing. Use medium heat and butter for best crispy crust. Work quickly when rolling to prevent bread from drying out. Chill roll-ups for 10 minutes before dipping if they don’t seal well. Store leftovers airtight in fridge up to 2 days and reheat gently to maintain crispiness.
