Cute Halloween Mummy Pancakes with Berry Eyes

Soft, fluffy pancakes shaped like cute mummies with blueberry eyes, perfect for a fun and easy Halloween breakfast that kids will love.

Ingredients

  • 1 ½ cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 ¼ cups milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Blueberries (for eyes)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate medium bowl, whisk the milk, egg, melted butter, and vanilla.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined; leave lumps in the batter.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour about ¼ cup of batter into the pan to form a thick, round circle for the mummy’s head.
  6. Cook for 2-3 minutes until bubbles form on the surface and edges look set.
  7. Pipe or drizzle thin strips of reserved batter across the top of the cooking pancake to create mummy wraps, leaving gaps for the face.
  8. Once the strips are set and the bottom is golden brown, carefully flip the pancake.
  9. Cook the other side for 1-2 minutes until golden.
  10. Remove from pan and immediately place two blueberries on the exposed ‘face’ area to create eyes.
  11. Keep finished pancakes warm in a 200°F oven while cooking the rest.

Notes

Do not overmix the batter to ensure fluffy pancakes. If using frozen blueberries, thaw and pat them dry first to prevent sogginess. Keep heat at medium to avoid burning the outside before the inside cooks.
