Delicious Homemade Fig Jam with Vanilla Bean

A small batch, no-pectin fig jam recipe featuring fresh figs and vanilla bean for a naturally sweet, richly flavored spread perfect for gifting or enjoying at home.

  • 1 pound (450 grams) fresh ripe figs, washed and quartered
  • 3/4 cup (150 grams) granulated sugar
  • 2 tablespoons (30 ml) fresh lemon juice
  • 1 whole vanilla bean, split and scraped
  • 1/4 cup (60 ml) water

Instructions

  1. Wash about 1 pound (450 grams) of ripe figs, remove stems, and quarter them. Cut into smaller pieces if figs are very large.
  2. Split the vanilla bean lengthwise with a sharp knife and scrape out the seeds. Set aside seeds and pod.
  3. Combine quartered figs, sugar, lemon juice, water, scraped vanilla seeds, and vanilla pod in a heavy-bottomed saucepan.
  4. Bring mixture to a gentle boil over medium heat, stirring frequently to dissolve sugar.
  5. Reduce heat to low and simmer uncovered for 45 to 60 minutes, stirring often to prevent sticking, until jam thickens and coats the back of a spoon.
  6. Remove and discard the vanilla pod. Stir and taste; add a tablespoon of sugar if sweeter jam is desired and dissolve.
  7. Test jam setting by placing a spoonful on a chilled plate; if it wrinkles when pushed, it is ready. If too runny, simmer a few minutes longer.
  8. Ladle hot jam into sterilized jars, seal tightly, and let cool to room temperature. Store in refrigerator up to 3 weeks or freeze for longer storage.

Notes

Use ripe, soft figs for best flavor. Stir frequently to prevent burning. Test jam set with wrinkle test on chilled plate. Vanilla pod left in pot infuses extra flavor but must be removed before jarring. Store refrigerated and consume within 3 weeks or freeze for up to 3 months.
