These double chocolate zucchini brownies combine rich cocoa and melty chocolate chunks with shredded zucchini for moist, fudgy brownies topped with sea salt flakes for a perfect sweet-salty contrast.

Ingredients

Scale
  • 1 cup (120g) all-purpose flour
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup (about 120g) zucchini, finely shredded and squeezed to remove excess moisture
  • 1/2 cup (90g) semi-sweet chocolate chips or chunks
  • Sea salt flakes, for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 8×8-inch pan with parchment paper, leaving some overhang for easy removal later.
  2. Shred 1 cup of zucchini using a box grater. Place the shreds in a clean kitchen towel and squeeze out as much moisture as you can.
  3. In a medium bowl, sift together 1 cup flour, 1/2 cup cocoa powder, 1/2 tsp baking powder, and 1/4 tsp salt. Set aside.
  4. In a large bowl, whisk 1/2 cup melted butter with 1 cup sugar until smooth. Add 2 eggs, one at a time, beating well after each addition. Stir in 1 tsp vanilla extract.
  5. Gradually add the dry mix to the wet ingredients, folding gently until just combined. Stop when you no longer see flour.
  6. Fold in the shredded zucchini and 1/2 cup chocolate chips evenly.
  7. Pour batter into the pan and spread evenly with a spatula, smoothing the top.
  8. Bake for 25-30 minutes. Check doneness by inserting a toothpick in the center; it should come out with a few moist crumbs but no wet batter.
  9. Immediately after removing from the oven, sprinkle sea salt flakes generously over the warm brownies.
  10. Let brownies cool in the pan on a wire rack for at least 20 minutes before slicing with a sharp knife. Use the parchment overhang to lift them out easily.

Notes

Squeeze out excess moisture from zucchini to prevent soggy brownies. Do not overmix batter to avoid toughness. Sprinkle sea salt flakes immediately after baking for best flavor contrast. Check doneness early if oven runs hot. Variations include adding nuts, spices, or making vegan/gluten-free substitutions.
