Easy 10-Minute Best Buffalo Chicken Football Dip with Blue Cheese

This incredibly creamy and flavorful buffalo chicken dip is made in a slow cooker for a perfectly melded, velvety texture. Ready in just 10 minutes of prep, it’s the ultimate game day appetizer that will disappear every time.

  • 2 cups cooked shredded chicken
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo wing sauce
  • 1/2 cup ranch dressing
  • 1/2 cup crumbled blue cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • Optional toppings: sliced green onions, extra blue cheese crumbles, a drizzle of ranch or blue cheese dressing, and a pinch of smoked paprika

Instructions

  1. Prep your chicken. If using a rotisserie chicken, remove the skin and bones, then shred the meat into bite-sized pieces. You should have about 2 cups. If using leftover chicken, shred it with two forks. (Pro tip: warm chicken shreds more easily than cold chicken.)
  2. Soften the cream cheese. Take your cream cheese out of the fridge about 20 minutes before you start. If you forgot, you can microwave it for 10-15 seconds — just be careful not to melt it. You want it soft, not liquid.
  3. Combine the base ingredients. In your slow cooker, add the softened cream cheese, buffalo wing sauce, and ranch dressing. Stir until the cream cheese is mostly incorporated — it doesn’t have to be perfectly smooth at this point.
  4. Add the chicken and cheeses. Toss in the shredded chicken, crumbled blue cheese, mozzarella, and cheddar. Stir everything together until it’s well combined. Don’t worry if it looks a little chunky — it will smooth out as it heats.
  5. Cook on low. Cover your slow cooker and set it to low. Let it cook for about 1.5 to 2 hours, stirring occasionally if you can. The dip is ready when the cheeses are fully melted and the mixture is hot and bubbly around the edges.
  6. Stir and adjust. Give the dip a good stir before serving. Taste it and see if you want more heat — you can add an extra splash of buffalo sauce if you like things spicier. If it seems too thick, stir in a tablespoon of milk or extra ranch dressing.
  7. Add toppings and serve. Sprinkle sliced green onions and extra blue cheese crumbles on top. Drizzle with a little extra ranch or blue cheese dressing if you’re feeling fancy. Serve warm with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

Don’t leave the dip on the ‘warm’ setting for more than a couple of hours, as the dairy can separate and become grainy. For a quicker version, cook on high for about 45 minutes, stirring frequently. Use a slow cooker liner for easy cleanup.
