A simple, grain-free, dairy-free, and refined sugar-free peach cobbler that is AIP and Paleo compliant. This recipe features a tender cassava flour crust and cinnamon-spiced peaches, perfect for a quick and delicious dessert.

  • 4 cups (600g) fresh peaches, peeled and sliced
  • 1 cup (120g) cassava flour
  • ½ cup (100g) coconut sugar
  • ⅓ cup (75ml) coconut oil, melted
  • 1 teaspoon cinnamon
  • Pinch of sea salt
  • Optional: 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your baking dish with a bit of coconut oil to prevent sticking.
  2. Peel and slice about 4 cups (600g) of ripe peaches. Toss them gently with 1 teaspoon of cinnamon and a pinch of sea salt. Set aside to let the flavors meld while you prepare the crust.
  3. In a mixing bowl, combine 1 cup (120g) cassava flour and ½ cup (100g) coconut sugar. Stir until well mixed.
  4. Pour ⅓ cup (75ml) melted coconut oil into the dry ingredients. Mix with a spatula until a slightly sticky dough forms. If it feels too dry, add a teaspoon of water at a time—don’t overdo it, or the crust will get gummy.
  5. Spread half of the crust mixture evenly into the bottom of the baking dish. Layer the cinnamon-spiced peaches on top, then crumble the remaining crust mixture over the peaches.
  6. Place the dish in the oven and bake for 30-35 minutes until the crust is golden brown and the peaches bubble gently around the edges.
  7. Let the cobbler cool for 10 minutes before serving to allow the juices to thicken.

Notes

Do not overmix the crust dough to avoid gumminess. Use a serrated peeler for peeling peaches. Tent foil over the cobbler if the crust browns too quickly. Let the cobbler rest after baking to thicken the juices. Optional: drizzle with warm coconut cream before serving.
