  • 2 medium apples (about 300g total), peeled and diced
  • 1/2 cup (120g) unsweetened applesauce
  • 1/3 cup (80ml) pure maple syrup
  • 2 large eggs
  • 1/2 cup (120ml) unsweetened almond milk
  • 2 tablespoons (30ml) coconut oil, melted
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (60g) chopped walnuts or pecans (optional)
  • 1/4 cup (40g) raisins or dried cranberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with cooking spray or coconut oil. If using paper liners, spray them lightly as well.
  2. Peel and dice the apples into small cubes, about 1/4 inch in size. Toss with 1/2 teaspoon of cinnamon (optional).
  3. In a large mixing bowl, combine the rolled oats, remaining 1 teaspoon cinnamon, baking powder, and salt. Whisk together. If adding nuts or dried fruit, stir them in now.
  4. In a separate medium bowl, whisk together the eggs, maple syrup, applesauce, almond milk, melted coconut oil, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir gently with a rubber spatula until just combined. Fold in the diced apples gently.
  6. Let the batter rest for 5 minutes to allow the oats to absorb some liquid.
  7. Spoon the batter into the prepared muffin cups, filling each cup almost to the top.
  8. Bake for 20 to 25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  9. Let the cups cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
  10. Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
