  • Cherry tomatoes, halved
  • Baby carrots or mini cucumbers, sliced
  • Sweet bell pepper strips (red or yellow)
  • Fresh berries or apple slices (tossed with lemon juice)
  • Seedless grapes or mandarin orange segments
  • Whole grain crackers or pretzels
  • Mini rice cakes or pita chips
  • Mini muffins or homemade granola bites
  • Olives or pickles (optional)

Instructions

  1. Prepare the protein: cube or shred cooked chicken breast; boil eggs for 10-12 minutes, cool, peel, and halve; portion cheese cubes or string cheese; steam or thaw edamame if frozen.
  2. Wash and slice veggies and fruits: rinse cherry tomatoes, grapes, and berries; slice baby carrots or cucumbers into sticks; halve cherry tomatoes and cut bell peppers into strips; slice apples thinly and toss with lemon juice to prevent browning.
  3. Assemble the bento box: place protein items in separate compartments or silicone cups; add veggies and fruits in adjacent sections; fill one compartment with crackers or mini rice cakes; reserve a small cup for hummus or yogurt dip; tuck olives or pickles in a smaller section if using.
  4. Final touches: ensure all compartments are sealed well to prevent leaks; include napkins and a small spoon or fork in the lunch bag; chill in the fridge until ready to pack.
