A quick and satisfying breakfast burrito featuring roasted green Hatch chilies, fluffy scrambled eggs, and melty cheese wrapped in a warm tortilla. Perfect for busy mornings or casual brunches.

  • 1 cup roasted and chopped green Hatch chilies (fresh or canned)
  • 4 large eggs, beaten (room temperature preferred)
  • 1 cup shredded cheese (sharp cheddar or Monterey Jack recommended)
  • 4 large flour tortillas (10-inch size)
  • 2 tablespoons milk (whole or 2% preferred)
  • Salt and pepper to taste
  • 1 tablespoon butter or oil (for cooking eggs)
  • Optional: 1/4 cup diced onions
  • Optional: 2 tablespoons chopped cilantro
  • Optional: salsa for serving

Instructions

  1. If using fresh green Hatch chilies, roast them over an open flame or under the broiler for 5-7 minutes until skin is charred and blistered. Place in a sealed bag or covered bowl for 10 minutes to steam, then peel, deseed, and chop. If using canned chilies, drain and chop.
  2. In a mixing bowl, whisk together 4 large eggs and 2 tablespoons of milk until pale yellow and frothy. Season with salt and pepper.
  3. Heat 1 tablespoon butter or oil in a non-stick skillet over medium-low heat. Pour in the egg mixture and gently stir with a spatula, scraping the pan as eggs set. When eggs are halfway cooked, fold in chopped Hatch chilies and half the shredded cheese. Continue cooking until eggs are fully set but moist.
  4. Warm tortillas on a dry skillet or microwave for 15-20 seconds until soft and pliable.
  5. Lay each warm tortilla flat and spoon an equal portion of the cheesy Hatch chili eggs down the center. Sprinkle remaining cheese on top, add optional diced onions or cilantro if desired. Fold in sides and roll up tightly.
  6. Optional: For a crispier burrito, place seam-side down on a hot skillet and cook 1-2 minutes per side until golden and cheese melts further.
  7. Serve immediately with salsa, hot sauce, or fresh avocado slices.

Notes

Cook eggs over low heat to keep them creamy and avoid rubberiness. Warm tortillas before filling to prevent tearing. Roasting fresh Hatch chilies adds smoky flavor but canned chilies are a convenient substitute. Optional finishing step to crisp burritos in skillet enhances texture.
