  • 1 1/2 teaspoons ground cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Spray a 24-cup mini muffin pan generously with nonstick cooking spray.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon until evenly distributed.
  3. In a separate medium bowl, whisk together granulated sugar, brown sugar, egg, pumpkin puree, vegetable oil, buttermilk, and vanilla until smooth.
  4. Pour wet ingredients into dry ingredients. Fold gently with a rubber spatula until just combined (do not overmix; a few lumps are fine).
  5. Divide batter evenly among the mini muffin cups, filling each about three-quarters full.
  6. Bake for 10 to 12 minutes, until tops spring back when lightly touched and a toothpick inserted in the center comes out clean.
