  • 2 tablespoons (30 ml) heavy cream or heavy whipping cream
  • 1 tablespoon (15 ml) milk (any kind)
  • 1 tablespoon (15 grams) canned pumpkin puree (100% pure)
  • 1 tablespoon (15 ml) maple syrup
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon pumpkin pie spice
  • 1 cup (240 ml) strong brewed coffee or espresso, chilled
  • Ice cubes

Instructions

  1. Brew a strong cup of coffee or espresso. Let it cool to room temperature or refrigerate for 10 minutes until cold.
  2. In a small bowl or jar, combine heavy cream, milk, pumpkin puree, maple syrup, vanilla extract, and pumpkin pie spice.
  3. Using a handheld milk frother, blend the mixture for 30-45 seconds until it doubles in volume and becomes thick and creamy, like soft whipped cream.
  4. Fill a tall glass with ice cubes. Pour the chilled coffee over the ice, filling the glass about 3/4 full.
  5. Using a spoon, gently dollop the pumpkin cream cold foam on top of the iced coffee, creating a distinct layer.
  6. Sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top. Serve immediately with a straw.

Notes

For best results, chill the heavy cream and even the bowl and frother before starting. Do not over-froth or it may turn into butter. If the foam sinks, it’s too thin; froth for a full 45 seconds. The foam can be stored in the fridge for up to 24 hours, but re-froth before using.
