These easy creamy turkey pinwheel wraps are quick to prepare, kid-friendly, and perfect for school lunches or light meals. They combine a tangy cream cheese spread with turkey, cheese, and fresh veggies rolled in colorful spinach tortillas.

  • 8 ounces (225 grams) turkey breast slices
  • 4 ounces (115 grams) cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 cup (50 grams) shredded cheddar cheese
  • 1 cup (30 grams) fresh spinach leaves
  • 1 small red bell pepper, thinly sliced
  • 1/2 cup (50 grams) shredded carrots
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon lemon juice (optional)

Instructions

  1. In a mixing bowl, combine softened cream cheese, mayonnaise, Dijon mustard, and optional lemon juice. Mix until smooth and creamy, about 2-3 minutes. Season with salt and pepper to taste.
  2. Place each spinach tortilla flat on a clean surface or cutting board.
  3. Spread about 2 tablespoons of the cream cheese mixture evenly on each tortilla, leaving a 1/2-inch border around the edges.
  4. Layer about 2 ounces (60 grams) of turkey slices evenly over the spread, then sprinkle about 2 tablespoons (25 grams) shredded cheddar cheese on top.
  5. Distribute fresh spinach leaves, thinly sliced red bell pepper, and shredded carrots evenly over the turkey and cheese.
  6. Starting from one edge, roll the tortilla firmly but gently into a tight log shape without squeezing too hard.
  7. Wrap each roll tightly in plastic wrap or parchment paper and chill in the refrigerator for at least 15 minutes.
  8. Remove the wraps from the fridge, unwrap, and slice each roll into 1-inch (2.5 cm) thick pinwheels using a sharp serrated knife.
  9. Arrange the pinwheels in a lunchbox or on a serving plate and serve chilled or at room temperature.

Notes

Softened cream cheese spreads more easily and prevents tearing the tortilla. Use a serrated knife to slice pinwheels cleanly without squashing. Chill wraps before slicing for best results.
