These crispy cinnamon sugar roasted pumpkin seeds are crunchy, sweet, warm with spice, and dangerously snackable. They’re the perfect fall treat that turns humble pumpkin seeds into the star of the show.

  • Water (for boiling)
  • 1 teaspoon salt (plus more for the boil)
  • 1 large egg white
  • ¼ cup granulated sugar
  • 1 ½ teaspoons ground cinnamon
  • 1 tablespoon unsalted butter, melted
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Clean the Seeds: Separate seeds from pumpkin guts. Place in a colander and rinse with cold water, rubbing seeds together to loosen pulp.
  2. Boil the Seeds: Place cleaned seeds in a small saucepan, cover with water, and add 1 teaspoon salt. Bring to a boil, then simmer for exactly 10 minutes.
  3. Dry the Seeds: Drain seeds and spread on a clean kitchen towel or paper towels. Pat very dry.
  4. Preheat & Prep: Preheat oven to 325°F (163°C). Line a baking sheet with parchment paper or a silicone baking mat.
  5. Make the Coating: In a medium bowl, whisk egg white until frothy. In a small bowl, mix sugar, cinnamon, and a pinch of salt. Add melted butter and vanilla (if using) to the egg white and whisk.
  6. Combine & Coat: Add dried seeds to the egg white mixture and toss well. Sprinkle cinnamon sugar mixture over seeds and toss again until evenly coated.
  7. Spread & Bake: Spread seeds in a single layer on the prepared baking sheet. Bake for 25-30 minutes, stirring halfway through, until deep golden brown and dry.
  8. Cool & Crunch: Let seeds cool completely on the baking sheet before serving.

Notes

Don’t skip the boiling step—it’s the secret to crispy seeds. Make sure seeds are very dry before baking to avoid steaming. Let seeds cool completely for maximum crunch. For vegan option, omit egg white and butter, use 1 tablespoon coconut oil and 1 tablespoon maple syrup instead.
