  • 1 tbsp cornstarch
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes
  • 2 tbsp cold water (for cornstarch slurry)
  • Sliced green onions and sesame seeds for garnish

Instructions

  1. Pat chicken thighs dry with paper towels and place them in the bottom of the slow cooker in a single layer.
  2. In a medium bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, grated ginger, and red pepper flakes until smooth.
  3. Pour the sauce over the chicken, ensuring all pieces are evenly coated and submerged.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours.
  5. About 30 minutes before serving, mix cornstarch with 2 tablespoons of cold water to create a slurry.
  6. Stir the slurry into the slow cooker and cook for another 15-30 minutes until the sauce thickens and becomes glossy.
  7. Garnish with green onions and sesame seeds, then serve over rice or noodles.

Notes

Avoid using chicken breasts as they may become dry. For a thicker sauce, ensure the cornstarch slurry is added during the last 30 minutes. You can sear the chicken thighs in a skillet before slow cooking for added flavor. Adjust red pepper flakes to taste.
