This Easy Crockpot Honey Garlic Meatloaf is a simple, 4-ingredient dinner that’s incredibly moist and flavorful. No browning required, just mix, shape, and let your slow cooker do the work for a perfect weeknight meal.

  • 1/2 cup honey
  • 4 cloves garlic, minced (or 1 tablespoon jarred minced garlic)
  • 1/2 cup ketchup (for glaze)
  • 1/4 cup ketchup (for meat mixture)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Line your slow cooker with a large sheet of aluminum foil, leaving overhang for handles. Lightly spray with nonstick cooking spray.
  2. In a large mixing bowl, combine 2 lbs ground beef, 1/4 cup ketchup, 4 minced garlic cloves, 1 teaspoon salt, and 1/2 teaspoon black pepper. Mix with your hands until just combined; do not overmix.
  3. Transfer the meat mixture to the center of the foil-lined crockpot. Shape into a loaf about 6 inches long, 4 inches wide, and 2 inches high.
  4. In a small bowl, whisk together 1/2 cup honey and 1/2 cup ketchup until smooth.
  5. Pour the honey garlic glaze evenly over the top and sides of the meatloaf.
  6. Cover the crockpot and cook on LOW for 6-7 hours, or until internal temperature reaches 160°F. Do not open the lid during the first 4 hours.
  7. Turn off the crockpot and let the meatloaf rest for 10-15 minutes before slicing.
  8. Use the foil handles to lift the meatloaf out onto a cutting board. Slice into 1-inch thick pieces and spoon leftover glaze from the crockpot over the slices before serving.

Notes

For best results, use 80/20 ground beef for moisture. Do not skip the foil lining for easy cleanup and removal. Let the meatloaf rest before slicing to prevent crumbling. Double the glaze if you like extra sauce.
