A creamy, flavorful white chicken chili made in the slow cooker with minimal effort. Perfect for game day, this recipe features tender shredded chicken, white beans, and a velvety cream cheese broth with warm spices.

  • 1.5 to 2 pounds boneless, skinless chicken breasts
  • 2 cans (15 ounces each) Great Northern or cannellini beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 8 ounces cream cheese, softened and cubed
  • 1/2 cup heavy cream
  • 1 can (4 ounces) diced green chiles
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • Optional toppings: shredded Monterey Jack cheese, fresh cilantro, sliced jalapeños, diced avocado, sour cream, crushed tortilla chips, lime wedges

Instructions

  1. Prep the ingredients: Dice the onion, mince the garlic, drain and rinse the beans, and cut the cream cheese into small cubes to soften.
  2. Layer the ingredients in the slow cooker: Place chicken breasts in the bottom. Sprinkle onion and garlic over the chicken. Add the drained beans and green chiles. Pour the chicken broth over everything.
  3. Add the spices: Sprinkle cumin, chili powder, oregano, salt, and pepper evenly on top. Do not stir.
  4. Cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is fork-tender.
  5. Remove the chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker.
  6. Add the softened cream cheese cubes and heavy cream. Stir gently until the cream cheese is fully melted and the chili is smooth and creamy.
  7. Taste and adjust seasoning with more salt, pepper, or cumin if needed. If too thick, add a splash of broth; if too thin, cook uncovered for 15-20 minutes.
  8. Serve hot in bowls with desired toppings like cheese, cilantro, avocado, sour cream, tortilla chips, and lime juice.

Notes

Add cream cheese at the end to prevent curdling. Do not lift the lid during the first 4 hours of cooking. The chili tastes even better the next day. For a thicker chili, mash some beans before adding cream cheese.
