  • 56 medium fresh peaches, peeled, pitted, and sliced
  • 1/2 cup packed light brown sugar
  • 3/4 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/3 cup (about 75 grams) unsalted butter, softened or melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel, pit, and slice 5-6 medium peaches. Toss them gently in a bowl with 1 tablespoon fresh lemon juice, 1/2 cup brown sugar, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg (if using), and a pinch of salt. Stir just enough to coat the slices evenly.
  3. Transfer the peach mixture to an 8×8-inch baking dish, spreading the peaches out evenly.
  4. In a separate bowl, combine 3/4 cup rolled oats, 1/2 cup all-purpose flour, 1/2 cup brown sugar, and a pinch of salt. Add 1/3 cup softened or melted unsalted butter and 1 teaspoon vanilla extract. Mix until the topping is crumbly and clumpy but holds together slightly when pressed.
  5. Sprinkle the oat topping evenly over the peaches.
  6. Bake in the preheated oven for 35-40 minutes until the topping is golden brown and crispy and peach juices are bubbling around the edges. If the topping browns too fast, loosely cover with foil for the last 10 minutes.
  7. Let the crisp cool slightly before serving. Best served warm but also delicious at room temperature or chilled.

Notes

If peaches are very juicy, drain excess liquid before baking to avoid soggy topping. Use old-fashioned rolled oats for best texture. For gluten-free, substitute all-purpose flour with gluten-free flour blend. If topping browns too quickly, cover loosely with foil during last 10 minutes of baking. Peeling peaches is easier if blanched in boiling water for 30 seconds then plunged into ice water.
