  • 1/3 cup (65 grams) granulated sugar
  • 2 tablespoons packed brown sugar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract (optional)
  • 1 cup (90 grams) rolled oats
  • 3/4 cup (95 grams) all-purpose flour
  • 1/2 cup (113 grams) cold unsalted butter, cubed
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel, pit, and slice 5-6 medium peaches. Toss them gently in a medium bowl with granulated sugar, brown sugar, lemon juice, cornstarch, ground cinnamon, and vanilla extract if using. Mix just until combined.
  3. Transfer the peach mixture to a 9×9 inch (23×23 cm) baking dish, spreading evenly.
  4. In a large bowl, combine rolled oats, all-purpose flour, a pinch of salt, and cold unsalted butter cubes. Use a pastry cutter or two forks to cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces.
  5. Sprinkle the oat crumble topping evenly over the peach filling, leaving some peach edges visible.
  6. Bake in the preheated oven for 40-45 minutes until the topping is golden brown and the peach filling is bubbling around the edges.
  7. Cool for at least 10 minutes before serving to allow the filling to thicken.

Notes

Keep butter cold until mixing to ensure a crisp topping. If topping browns too fast, tent with foil halfway through baking. Add extra cornstarch if peaches are very juicy. Can substitute almond or gluten-free flour and coconut oil for gluten-free and dairy-free versions. Leftovers keep well refrigerated for up to 3 days and can be reheated in oven or microwave.
