Instructions

  1. In a large mixing bowl, combine the warm water and brown sugar. Sprinkle the yeast over the top and stir gently. Let sit for about 5 minutes until foamy and bubbly.
  2. Add the melted butter, salt, and 2 cups of flour to the yeast mixture. Stir with a wooden spoon until a shaggy dough forms. Gradually add the remaining flour, ½ cup at a time, until the dough pulls away from the sides of the bowl. The dough should be slightly tacky but not sticky.
  3. Turn the dough out onto a lightly floured surface. Knead for 6 to 8 minutes until smooth and elastic. (Alternatively, use a stand mixer with a dough hook on medium-low speed for 4 to 5 minutes.)
  4. Place the dough in a lightly greased bowl, turning once to coat. Cover with plastic wrap or a clean kitchen towel. Let rise in a warm, draft-free spot for about 1 hour, or until doubled in size.
  5. Punch the dough down and turn it out onto a clean work surface. Divide into 4 equal portions. Roll each portion into a 12-inch long rope, about 1 inch thick. Cut each rope into 1-inch bite-sized pieces (about 12 to 15 per rope, total 48 to 60 bites).
  6. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat. In a large pot, bring 8 cups of water to a rolling boil. Carefully add ⅓ cup baking soda (it will bubble vigorously). Reduce heat to a gentle simmer. Working in batches of 8 to 10 bites, drop the pretzel bites into the simmering water. Boil for 30 seconds, flip, and boil another 30 seconds. Remove with a slotted spoon and place on the prepared baking sheet, spaced about 1 inch apart.
  7. Bake the pretzel bites for 12 to 15 minutes, until deep golden brown.
  8. While the bites bake, make the beer cheese: In a small saucepan, melt 2 tablespoons butter over medium heat. Whisk in 2 tablespoons flour and cook for 1 minute, stirring constantly. Slowly pour in 1 cup milk while whisking continuously, then add ½ cup beer and whisk until smooth. Cook, whisking often, until thickened (about 3 to 4 minutes). Reduce heat to low. Notes

Do not overboil the pretzel bites—30 seconds per side is ideal. Use freshly shredded cheese for a smooth beer cheese sauce. Keep the beer cheese warm but not boiling to prevent it from breaking. The dough can be made ahead and refrigerated after the first rise for up to 24 hours. Leftover pretzel bites can be stored at room temperature for up to 2 days and reheated in a 350°F oven for 5 minutes.
