A stunning summer salad featuring smoky grilled peaches, creamy burrata, peppery arugula, and a honey drizzle. It’s quick, easy, and perfect for impressing guests.

Ingredients

Scale
  • 4 ripe but firm peaches, halved and pitted
  • 8 ounces burrata cheese
  • 4 cups fresh arugula
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar (optional)
  • Flaky sea salt
  • Freshly cracked black pepper
  • 1012 fresh basil leaves, torn or whole
  • 1/4 cup toasted pine nuts or walnuts
  • 3 tablespoons honey (orange blossom or wildflower)
  • 1 tablespoon warm water
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your grill or grill pan over medium-high heat (about 400°F or 200°C) for at least 5 minutes.
  2. Wash and dry the peaches. Cut them in half around the pit, twist to separate, and remove the pit. Brush the cut sides lightly with about 1 tablespoon of olive oil.
  3. Place the peaches cut-side down on the hot grill. Cook for 3-4 minutes without moving them. Flip and cook for another 2-3 minutes on the skin side. Remove and let cool slightly.
  4. While peaches are grilling, combine honey, warm water, and red pepper flakes (if using) in a small bowl. Whisk until smooth.
  5. Spread arugula on a large serving platter. Drizzle with remaining 1 tablespoon olive oil and balsamic vinegar (if using). Toss gently and season with salt and pepper.
  6. Place the burrata in the center of the arugula. You can keep it whole or tear it into large pieces.
  7. Arrange the grilled peach halves around the burrata.
  8. Drizzle the honey mixture over the peaches and burrata. Sprinkle with toasted nuts and scatter basil leaves on top. Finish with a pinch of flaky sea salt and black pepper.
  9. Serve immediately while the peaches are still warm and the burrata is cold and creamy.

Notes

Choose ripe but firm peaches. Let burrata come to room temperature before serving. Toast nuts for best flavor. Season in layers. Serve immediately for best texture contrast.
