  • 1 cup cottage cheese
  • ½ cup shredded cheddar cheese
  • ½ cup cooked breakfast sausage, crumbled
  • ¼ cup finely diced bell pepper
  • ¼ cup chopped spinach
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with silicone liners.
  2. Cook breakfast sausage in a skillet over medium heat until browned, about 5-7 minutes. Drain on paper towel and let cool.
  3. Dice bell pepper into small pieces (pea-sized). Chop spinach and press between paper towels to remove excess moisture.
  4. In a blender, combine eggs, cottage cheese, salt, pepper, and garlic powder. Blend on high for 20-30 seconds until smooth and pale yellow.
  5. Pour egg mixture into a mixing bowl. Add shredded cheddar, crumbled sausage, diced bell pepper, and chopped spinach. Stir gently until evenly distributed.
  6. Fill each muffin cup about ¾ full with the mixture.
  7. Bake for 18-22 minutes, until set in the center and edges are lightly golden. A toothpick inserted in the center should come out clean.
  8. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Don’t overbake; start checking at 18 minutes. Blot veggies dry to avoid soggy muffins. Let cool completely before storing. Silicone liners are recommended for easy removal. Blending eggs and cottage cheese is key for light texture.
