Easy Loaded Turkey Club Bento Box: Perfect Kid’s Lunch

A quick and easy bento box lunch featuring a turkey club sandwich with fresh fruits and veggies, perfect for school lunches or busy mornings. Ready in under 15 minutes with simple ingredients.

  • 4 slices deli turkey (oven-roasted or honey smoked)
  • 2 slices bread (white, whole wheat, sourdough, or brioche)
  • 1 slice cheddar cheese (or provolone, Swiss, American)
  • 1 tablespoon mayonnaise (or Greek yogurt)
  • 1 teaspoon Dijon mustard (optional)
  • 23 leaves lettuce (romaine or butter lettuce)
  • 45 slices cucumber
  • 1/2 cup cherry tomatoes (halved or whole)
  • 1/4 cup baby carrots (or carrot sticks)
  • 1/4 cup grapes (red or green)
  • 1 small apple (sliced, tossed with lemon juice)
  • 2 tablespoons hummus (or ranch dressing)
  • 1 hard-boiled egg (halved, optional)
  • 1/4 cup pretzel sticks (optional)
  • 1 small cheese stick (cut into rounds, optional)
  • 2 tablespoons yogurt-covered raisins (optional)

Instructions

  1. In a small bowl, mix together 1 tablespoon mayonnaise and 1 teaspoon Dijon mustard (if using). Spread evenly on one side of each bread slice.
  2. Place 4 slices deli turkey on one slice of bread, folding slightly to fit. Top with 1 slice cheddar cheese. If using cookie cutters, press into the bread now.
  3. Place 2-3 lettuce leaves on top of the cheese, then arrange 4-5 cucumber slices over the lettuce.
  4. Place the second slice of bread on top, spread-side down. Press gently. If using cookie cutters, press firmly to cut through. Otherwise, slice diagonally or into quarters.
  5. Halve 1/2 cup cherry tomatoes. Cut 1/4 cup baby carrots into sticks. Slice 1 small apple and toss with lemon juice. Wash 1/4 cup grapes and pat dry.
  6. Place the sandwich in the largest compartment of the bento box. Arrange cherry tomatoes, carrot sticks, apple slices, and grapes in smaller compartments. Add hummus or ranch in a small cup.
  7. Add optional extras: halved hard-boiled egg, pretzel sticks, cheese rounds, or yogurt-covered raisins in remaining spaces.
  8. Close the lid securely. If using an insulated bag, add an ice pack. Refrigerate overnight if prepping ahead.

Notes

Toast bread lightly for extra crunch and to prevent sogginess. Use a lettuce leaf as a barrier between wet and dry ingredients. Prep fruits and veggies in batches on Sunday for quick assembly. Let assembled sandwich rest 5 minutes before packing to meld flavors. Pack wet items away from bread to avoid sogginess.
