Instructions

  1. Preheat your oven to 350°F (175°C) and grease your muffin tin or line it with muffin cups.
  2. Whisk the eggs in a large bowl until pale and frothy, about 1 to 2 minutes.
  3. Add the cottage cheese to the eggs and mix gently, keeping some texture from the cheese curds.
  4. Stir in the oats, baking powder, garlic powder, onion powder, salt, and black pepper. If the batter feels too dry, add 1-2 tablespoons of milk (dairy or plant-based).
  5. Fold in the shredded cheddar cheese, chopped spinach, and any optional add-ins, mixing gently to combine.
  6. Spoon the batter evenly into the muffin cups, filling about 3/4 full each (makes 10-12 muffins).
  7. Bake for 20-25 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean. Start checking at 18 minutes to avoid overbaking.
