A simple, comforting side dish featuring carrots, parsnips, and sweet potatoes roasted with maple syrup, olive oil, and fresh herbs until caramelized and tender.

Ingredients

  • Carrots, peeled and cut into 1-1.5 inch pieces
  • Parsnips, peeled and cut into 1-1.5 inch pieces
  • Sweet potatoes, peeled and cut into 1-1.5 inch cubes
  • Red onion, roughly chopped into large chunks
  • 100% pure maple syrup
  • Extra virgin olive oil
  • Fresh garlic, minced
  • Fresh rosemary, chopped
  • Fresh thyme leaves
  • Kosher salt
  • Freshly cracked black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash, peel, and chop all vegetables into uniform 1 to 1.5-inch pieces.
  3. Roughly chop the red onion, mince the garlic, and chop the fresh rosemary and thyme.
  4. In a large mixing bowl, combine olive oil, maple syrup, minced garlic, chopped herbs, salt, and pepper. Whisk until well combined.
  5. Add the chopped vegetables to the bowl and toss thoroughly to coat evenly in the glaze.
  6. Line a large sheet pan with parchment paper and spread vegetables in a single layer, ensuring they are not crowded.
  7. Roast for 20 minutes, then remove and stir or flip the vegetables.
  8. Return to oven and roast for another 15-20 minutes until tender and edges are caramelized.
  9. Check for doneness with a fork. Let cool for a minute before serving as the glaze will thicken.

Notes

Ensure vegetables are cut into uniform sizes for even cooking. Do not overcrowd the pan, as this causes steaming instead of roasting. Keep an eye on the oven during the last 5 minutes as maple syrup can burn quickly. If using honey instead of maple syrup, the flavor profile will change. For extra crunch, toss in pecans or walnuts during the last 5 minutes of roasting.
