These mini turkey avocado pinwheels are quick, healthy, and perfect for lunchboxes. They combine creamy avocado with savory turkey in a neat, bite-sized wrap.

  • 6 small or medium flour tortillas (whole wheat preferred)
  • Cooked turkey breast slices (3-4 thin slices per tortilla)
  • 1 ripe avocado, mashed
  • 1 tablespoon freshly squeezed lime juice
  • 1 tablespoon Greek yogurt or mayonnaise
  • 1 tablespoon fresh cilantro or parsley, finely chopped (optional)
  • Salt and pepper to taste
  • Shredded cheese (sharp cheddar or Monterey Jack, optional)
  • Thinly sliced cucumber or red bell pepper (optional)

Instructions

  1. In a medium mixing bowl, mash 1 ripe avocado with a fork until creamy but still a bit chunky. Add 1 tablespoon of freshly squeezed lime juice, 1 tablespoon of Greek yogurt (or mayonnaise), finely chopped 1 tablespoon fresh cilantro or parsley, and a pinch each of salt and pepper. Stir everything together gently.
  2. Place 6 small or medium flour tortillas on a clean surface. Spread a thin, even layer of the avocado mixture over each tortilla, leaving about ½ inch around the edges clear.
  3. Layer 3-4 thin slices of cooked turkey breast evenly over the avocado spread on each tortilla. If using, sprinkle shredded cheese and lay down thin cucumber or bell pepper slices.
  4. Starting at one edge, roll each tortilla up firmly but gently to avoid tearing. Wrap the rolled tortilla tightly in plastic wrap or parchment paper to hold its shape.
  5. Place the wrapped rolls in the refrigerator for at least 15 minutes to set.
  6. Using a sharp knife, slice each roll into 1-inch thick rounds. Arrange on a plate or pack into lunch containers.

Notes

Use ripe but not overripe avocados to avoid watery mixture. Wrap tightly before chilling to ensure clean slices. Use a serrated knife for best slicing results. Can be made ahead and stored in the fridge up to 2 days. For gluten-free, use gluten-free wraps or large lettuce leaves. For dairy-free, omit Greek yogurt and add extra lime juice or olive oil.
