Quick and wholesome no-bake peanut butter energy balls perfect for healthy lunchboxes and on-the-go snacks. Made with simple pantry staples, these chewy bites are kid-friendly and customizable.

Ingredients

Scale
  • 1 cup creamy or crunchy peanut butter (natural, no added sugar preferred)
  • 1 1/2 cups old-fashioned rolled oats
  • 1/3 cup honey or pure maple syrup
  • 2 tablespoons ground flaxseed (optional)
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips or cacao nibs (optional)
  • Pinch of salt

Instructions

  1. Gather your ingredients: Measure out peanut butter, rolled oats, honey, ground flaxseed, vanilla extract, chia seeds (if using), salt, and mini chocolate chips (if using).
  2. Combine dry ingredients: In a large mixing bowl, stir together oats, ground flaxseed, chia seeds, salt, and chocolate chips to distribute evenly.
  3. Add peanut butter, honey, and vanilla extract. Mix with a sturdy spoon or spatula until a uniform, sticky dough forms. Adjust texture by adding a teaspoon of water or more honey if too dry, or more oats if too sticky.
  4. Chill the mixture in the refrigerator for about 10 minutes to firm up.
  5. Shape the balls: Scoop about 1 tablespoon of mixture and roll between palms into tight balls. Place on a parchment-lined tray. Wet hands or dust with oats if mixture sticks.
  6. Refrigerate the shaped balls for at least 30 minutes to set and firm up.
  7. Store in an airtight container in the refrigerator for up to one week or freeze for up to three months.

Notes

Use natural peanut butter for best flavor and texture. Chill mixture before rolling to prevent stickiness. Adjust sweetness gradually. Wet hands or dust with oats to ease rolling. Store in airtight container refrigerated or frozen. Variations include nut-free, protein boost, seasonal spices, and vegan substitutions.
