These easy no-bake pumpkin protein balls are a quick, healthy snack that tastes like dessert but packs a protein punch. Made with simple pantry ingredients, they come together in under 15 minutes and are perfect for meal prep, lunchboxes, or a last-minute crowd-pleaser.

  • ½ cup (120g) pumpkin puree (not pumpkin pie filling)
  • ⅓ cup (80g) peanut butter (natural, stirred well)
  • 3 tablespoons (45ml) pure maple syrup
  • ¼ cup (30g) vanilla or unflavored protein powder
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • 1 tablespoon chia seeds (optional)
  • ¼ cup (45g) dark chocolate chips (mini chips preferred)
  • Pinch of salt

Instructions

  1. Mix the wet ingredients first. In a medium bowl, combine the pumpkin puree, peanut butter, and maple syrup. Stir until smooth, about 30 seconds.
  2. Add the oats and let them sit. Stir in the rolled oats. Let the mixture sit for 5 minutes to allow the oats to absorb moisture.
  3. Add the dry ingredients. Sprinkle in the protein powder, pumpkin pie spice, cinnamon, chia seeds, and salt. Stir until evenly distributed. The mixture should be thick and slightly sticky but hold together when pressed. If too dry, add a teaspoon of maple syrup or water. If too wet, add another tablespoon of oats.
  4. Fold in the chocolate chips. Gently stir them in. Optionally, save a few to press into the tops of the balls for looks.
  5. Roll into balls. Using a small cookie scoop or a tablespoon, scoop out portions and roll between your palms to form smooth balls. You should get about 14-16 balls. If the mixture sticks to your hands, lightly dampen your palms with water.
  6. Chill (optional but recommended). Place the balls on a plate or baking sheet and refrigerate for at least 30 minutes to firm up and meld flavors.
  7. Store and enjoy. Transfer to an airtight container. Keep in the fridge for up to a week, or freeze for up to 3 months.

Notes

Let the oats rest in the pumpkin mixture for 5 minutes to improve texture. Different protein powders absorb liquid differently; adjust with a teaspoon of maple syrup or water if needed. Use pure pumpkin puree, not pumpkin pie filling. For nut-free, substitute sunflower seed butter. For gluten-free, use certified gluten-free oats. These taste even better the next day as flavors meld.
