  • 1/2 cup packed brown sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour, spooned and leveled
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup walnuts, chopped

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line the bottom with parchment paper.
  2. Mash the ripe bananas in a large mixing bowl until smooth.
  3. Add softened butter, granulated sugar, and brown sugar to the bananas. Whisk vigorously for about a minute until sugars dissolve slightly.
  4. Add the egg and vanilla extract, whisking until combined.
  5. Sprinkle flour, baking soda, and salt over the wet mixture. Gently fold in with a spatula using a cutting motion from bottom up, stopping as soon as no flour streaks remain.
  6. Fold in chopped walnuts gently.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes. If the top browns too quickly after 40 minutes, tent with aluminum foil. The bread is done when a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Ensure bananas are very ripe (blackened) for maximum sweetness and moisture. Do not overmix the batter once flour is added to avoid a tough texture. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, substitute butter with plant-based butter or coconut oil.
