  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (about 1 medium) zucchini, finely grated and gently squeezed to remove excess moisture
  • 3/4 cup (130g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Grate the zucchini finely using your grater or food processor. Place the grated zucchini in a clean kitchen towel and gently squeeze out any excess moisture until damp but not dripping.
  3. In your large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Stir until smooth and glossy, about 1-2 minutes.
  4. Add the egg and vanilla extract to the bowl, mixing well until fully incorporated.
  5. In a separate small bowl, whisk together the flour, baking soda, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, stirring gently but thoroughly. Avoid overmixing.
  7. Fold in the grated zucchini and chocolate chips with a spatula until just combined.
  8. Scoop heaping tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes until the edges are lightly golden but the centers still look soft.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
