  • ¾ cup granulated sugar
  • ¼ cup brown sugar, packed

  • 1¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1½ teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • ½ cup chocolate chips, chopped walnuts, or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly grease the exposed ends.
  2. In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth. A few small lumps are fine.
  3. Add the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract to the bowl. Whisk or stir until well combined and slightly glossy.
  4. Sprinkle the flour, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon over the wet mixture. Stir gently with a fork or rubber spatula until just combined. Stop as soon as no dry flour remains; a few streaks are okay. Do not overmix.
  5. If using mix-ins, gently fold them in with a few quick strokes.
  6. Pour the batter into the prepared loaf pan and spread evenly. The batter will be thick.
  7. Bake for 50-60 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly after 40 minutes, tent loosely with aluminum foil.
  8. Let the bread cool in the pan for 10 minutes, then lift it out using the parchment paper and transfer to a wire rack. Cool completely before slicing, about 1 hour.
