Easy Roasted Heirloom Tomato Caprese Tart

A quick and easy summer tart featuring roasted heirloom tomatoes, fresh mozzarella, and basil on a flaky puff pastry crust. Perfect for casual dinners or entertaining.

  • 1 sheet puff pastry (about 8 oz / 225 g), thawed
  • 34 medium heirloom tomatoes, sliced
  • 8 oz fresh mozzarella, sliced or torn
  • 1012 fresh basil leaves, lightly torn
  • 2 tablespoons extra virgin olive oil
  • Balsamic glaze (optional, for drizzling)
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon dried oregano or Italian seasoning (optional)
  • 1 clove garlic, minced (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice heirloom tomatoes about 1/4-inch thick. Toss with 1 tablespoon olive oil, minced garlic (if using), dried oregano, salt, and pepper in a mixing bowl.
  3. Spread the tomatoes evenly on a parchment-lined baking sheet and roast for 15-18 minutes until softened and slightly caramelized.
  4. Unfold the puff pastry on a parchment-lined baking sheet. Lightly score a 1-inch border around the edges without cutting through.
  5. Dock the center of the pastry with a fork to prevent excessive puffing.
  6. Partially bake the puff pastry for 10-12 minutes until it just starts to turn golden.
  7. Remove the pastry from the oven and layer the roasted tomatoes evenly over the center.
  8. Add slices or pieces of fresh mozzarella on top of the tomatoes.
  9. Return the tart to the oven and bake for another 8-10 minutes until the cheese melts and the edges are golden and crispy.
  10. Remove from oven and scatter torn basil leaves on top while still warm.
  11. Drizzle with balsamic glaze if desired, slice, and serve warm or at room temperature.

Notes

If puff pastry browns too fast, tent with foil halfway through baking. Avoid overloading tomatoes to prevent soggy crust. Keep puff pastry cold until ready to bake. For gluten-free, use almond flour crust; for dairy-free, substitute vegan mozzarella or avocado.
