  • 4 salmon filets (6 ounces each), skin on or off
  • Salt and freshly ground black pepper
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 bunch asparagus, woody ends trimmed
  • 1 cup cherry tomatoes
  • 1 lemon, sliced into thin rounds

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center of the oven. Line a baking sheet with parchment paper or foil.
  2. Make the lemon herb butter: In a small bowl, combine softened butter, minced garlic, lemon juice, lemon zest, chopped parsley, dill, and thyme. Mix until well combined.
  3. Prep the vegetables: Snap off woody ends of asparagus. Toss asparagus and cherry tomatoes with a drizzle of olive oil and a pinch of salt. Spread on one side of the baking sheet.
  4. Season the salmon: Pat salmon filets dry with paper towels. Season both sides with salt and pepper. Place skin-side down on the other side of the baking sheet.
  5. Top with herb butter: Divide the lemon herb butter evenly among the salmon filets, spreading over the tops. Lay lemon slices around the salmon and vegetables.
  6. Roast for 12-15 minutes, until salmon flakes easily with a fork and internal temperature reaches 145°F (63°C). Vegetables should be tender-crisp.
  7. Remove from oven. Let rest for 2 minutes. Spoon pan juices over salmon and vegetables. Garnish with fresh parsley or dill and a squeeze of lemon juice if desired.

Notes

For even cooking, tuck thinner ends of salmon filets under. If vegetables finish before salmon, remove them to a plate. Use room temperature butter for easy spreading. Fresh herbs are recommended for best flavor.
