This easy sheet pan sausage and potato soup delivers big flavor with minimal effort. Roasted sausage and potatoes create a deeply savory broth that tastes like it simmered for hours, but comes together in about 45 minutes.

  • 2 pounds Yukon Gold potatoes, cut into 3/4-inch cubes
  • 1 large yellow onion, cut into 1-inch chunks
  • 4 cloves garlic, smashed but left whole
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F. Line your sheet pan with parchment paper if desired.
  2. Wash and cube potatoes into 3/4-inch pieces. Slice onion into 1-inch chunks, smash garlic cloves, and slice sausage into 1/2-inch rounds.
  3. In a large bowl, combine potatoes, onion, garlic, and sausage. Drizzle with olive oil, then sprinkle with smoked paprika, salt, and pepper. Toss until evenly coated.
  4. Spread everything in a single layer on the sheet pan, ensuring nothing overlaps too much.
  5. Roast for 25-30 minutes, stirring halfway through, until potatoes are golden brown and tender, and sausage is caramelized.
  6. While vegetables roast, in a Dutch oven over medium heat, whisk together chicken broth and flour until smooth. Bring to a gentle simmer.
  7. Once vegetables and sausage are done, carefully scrape everything off the sheet pan into the simmering broth, including all browned bits.
  8. Stir in heavy cream, thyme, and red pepper flakes. Bring back to a gentle simmer and cook for 5-7 minutes. Adjust salt and pepper to taste.
  9. Check potatoes for tenderness; if still firm, simmer another 5 minutes.
  10. Serve hot, garnished with fresh parsley and grated Parmesan cheese.

Notes

Don’t skip scraping the sheet pan—the browned bits are full of flavor. For a dairy-free version, skip the cream or use full-fat coconut milk. For a gluten-free version, use cornstarch or arrowroot powder instead of flour. The soup tastes even better the next day.
