Instructions

  1. Rinse and slice ½ cup of fresh strawberries or thaw frozen strawberries for 10 minutes and drain excess juice. Toss strawberries with 1 teaspoon lemon juice and a pinch of salt in a microwave-safe mug. Set aside.
  2. In a small bowl, mix ¼ cup rolled oats, 2 tablespoons all-purpose flour, 2 tablespoons packed brown sugar, ¼ teaspoon ground cinnamon, and a pinch of salt.
  3. Pour in 2 tablespoons melted unsalted butter and ½ teaspoon vanilla extract if using. Stir with a fork or whisk until crumbly and evenly moistened. Add a splash of melted butter if mixture is too dry.
  4. Spoon the oat topping evenly over the strawberries in the mug without pressing down.
  5. Microwave on high for 1 minute 30 seconds to 2 minutes until topping is golden and strawberries are bubbling. Use a towel or oven mitt to remove as mug will be hot.
  6. Let the crisp cool for 2 minutes before serving to allow the topping to firm up.
