  • 2 pounds boneless, skinless chicken breasts
  • 1 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1/2 cup unsalted butter, melted
  • 1 packet (about 1 ounce) ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 12 to 16 slider buns (such as Hawaiian rolls)
  • 1/2 cup blue cheese crumbles (optional)
  • Dill pickle slices (for serving)
  • 2 tablespoons butter, melted (for toasting buns)

Instructions

  1. Place the chicken breasts in the bottom of a 5 to 6 quart slow cooker, arranging in a single layer if possible.
  2. In a small bowl, whisk together the hot sauce, melted butter, ranch seasoning mix, garlic powder, and onion powder. Pour evenly over the chicken.
  3. Cover and cook on LOW for 4 to 5 hours or on HIGH for 2.5 to 3 hours, until the chicken is tender and shreds easily.
  4. Remove the chicken to a cutting board and shred with two forks (or use an electric hand mixer on low speed directly in the slow cooker).
  5. Return the shredded chicken to the slow cooker and stir into the sauce. Let sit on WARM or LOW for 10 to 15 minutes to absorb flavor.
  6. Preheat a large skillet or griddle over medium heat. Slice the slider buns in half horizontally and brush the cut sides with the 2 tablespoons of melted butter.
  7. Place the buns cut-side down in the hot skillet and cook for 1 to 2 minutes, until golden brown and crispy.
  8. Assemble the sliders: Place the bottom buns on a serving platter, spoon the buffalo chicken onto each, top with blue cheese crumbles and a pickle slice, then cover with the top buns. Serve immediately.

Notes

Don’t skip toasting the buns—it prevents sogginess. Let the shredded chicken rest in the sauce for 10-15 minutes for best flavor. For a milder version, reduce hot sauce to 3/4 cup and add 1/4 cup chicken broth. Leftover chicken keeps in the fridge for up to 4 days and freezes for up to 3 months.
