A simple, forgiving slow cooker recipe that yields tender, shredded chicken infused with zesty salsa flavor. Perfect for busy weeknights, this meal requires minimal prep and delivers maximum comfort.

Ingredients

Scale
  • 2 to 3 pounds boneless, skinless chicken breasts
  • 16-ounce jar of medium or mild chunky salsa
  • 1 packet taco seasoning or homemade mix (cumin, chili powder, garlic powder, salt)
  • 1 tablespoon avocado oil or olive oil
  • Optional toppings: shredded cheese, fresh cilantro, diced onions, lime wedges, sour cream

Instructions

  1. Rinse chicken breasts and pat dry. Place them in the bottom of a 6-quart slow cooker in a single layer.
  2. Pour the entire jar of salsa over the chicken. Sprinkle taco seasoning evenly over the top. Do not stir.
  3. Lightly grease the slow cooker with avocado or olive oil before adding ingredients to prevent sticking.
  4. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours. LOW is recommended for better texture.
  5. Remove chicken with tongs and let cool slightly. Shred meat using two forks.
  6. Return shredded chicken to the slow cooker and stir into the remaining salsa juices.
  7. Taste and adjust seasoning with salt or red pepper flakes if needed. Serve immediately with toppings.

Notes

[‘For a less soupy filling, leave the lid off for the last 30 minutes of cooking to evaporate excess liquid.’, ‘Chicken thighs can be substituted for breasts; they stay juicier but may require slightly longer cooking time.’, ‘Add fresh lime juice before serving to brighten the flavor.’, ‘For a vegetarian version, substitute chicken with drained black beans or chickpeas and reduce cooking time to 2-3 hours on HIGH.’, ‘Ensure salsa label is checked for gluten-free status if necessary.’]
