A simple, 5-ingredient slow cooker recipe that produces tender, juicy shredded chicken in a rich salsa sauce. Perfect for busy weeknights and meal prep.

  • 2 to 3 pounds boneless, skinless chicken breasts
  • 16 ounces jar of medium or mild salsa
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon freshly cracked black pepper
  • 8 to 10 flour or corn tortillas
  • Toppings: shredded cheese, cilantro, lime wedges, avocado

Instructions

  1. Place chicken breasts in the slow cooker. If large, cut in half horizontally for even cooking.
  2. Pour the entire jar of salsa over the chicken, ensuring pieces are mostly covered.
  3. Sprinkle cumin, chili powder, salt, and pepper over the chicken and salsa. Do not stir.
  4. Cover and cook on low for 6 to 8 hours without lifting the lid.
  5. Remove chicken and shred using two forks.
  6. Return shredded chicken to the slow cooker and stir into the sauce. Let sit for 10 minutes to absorb flavors.
  7. Warm tortillas in a skillet or microwave. Fill with chicken and toppings. Serve immediately.
