Easy Small-Batch Fig Honey Jam Recipe

This small-batch fig honey jam is a rustic, no-pectin recipe made with just three main ingredients. It’s perfect for gifting, versatile for serving, and a delicious way to preserve summer figs.

  • 1 pound fresh figs (about 450g), stemmed and roughly chopped
  • ½ cup honey (170g)
  • 2 tablespoons freshly squeezed lemon juice (30ml)
  • Pinch of fine sea salt (optional)

Instructions

  1. Rinse figs gently, pat dry, trim off tough stem ends, and roughly chop into small pieces (about 3 cups).
  2. Place chopped figs in a heavy-bottomed saucepan or Dutch oven. Drizzle honey over the top, add lemon juice and a pinch of salt. Stir gently and let sit for 10 minutes to release juices.
  3. Place saucepan over medium heat and bring to a gentle simmer. Reduce heat to medium-low and cook, stirring occasionally, for 10-15 minutes until the mixture turns a deep burgundy color.
  4. Using the back of a wooden spoon or a potato masher, gently crush about half of the fig chunks. Continue to simmer for 20-25 minutes, stirring every few minutes, until the jam thickens and reduces by about a third.
  5. Test for doneness using the cold plate test: place a small spoonful of hot jam on a frozen plate, let sit 30 seconds, then push with your finger. If it wrinkles and doesn’t run back together, it’s set. If still runny, cook 2-3 more minutes and test again.
  6. Remove pot from heat and let cool for 10 minutes. Ladle warm jam into sterilized 8-ounce jars, leaving ¼ inch headspace. Wipe rims, screw on lids, and let cool completely to room temperature.

Notes

This jam is not shelf-stable for long-term storage. Store in the refrigerator for up to 3 weeks or freeze for up to 6 months. For a spiced version, add a cinnamon stick or vanilla bean while simmering. For a savory twist, add 1 tablespoon balsamic vinegar with the lemon juice.
