  • 4 pounds fresh peaches, peeled and sliced (about 1.8 kg)
  • 1 cup granulated sugar (200 g)
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Peel and slice about 4 pounds of ripe but firm peaches. To ease peeling, score the skin with a paring knife and blanch in boiling water for 30 seconds. This takes about 15 minutes.
  2. In a large mixing bowl, combine the sliced peaches with 1 cup granulated sugar, 2 teaspoons ground cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon ground nutmeg, and a pinch of salt. Toss well to coat evenly.
  3. Stir in 2 tablespoons fresh lemon juice and 1 teaspoon vanilla extract if using.
  4. Pour the peach mixture into a 4-6 quart slow cooker. Spread evenly without packing down. Set the slow cooker to low heat.
  5. Cook overnight for 8 to 10 hours until peaches are very soft and the mixture thickens to a jam-like consistency.
  6. Optional: Use an immersion blender in the slow cooker to puree the peach butter to desired smoothness, leaving some chunks if preferred.
  7. Let the peach butter cool to room temperature, then transfer to sterilized jars. Store in the refrigerator for up to 3 weeks or freeze for longer storage.

Notes

If you forget to peel the peaches, leaving skins on adds rustic texture and deeper color. Stir well to distribute spices evenly. For thicker butter, cook longer with the lid slightly ajar or blend with an immersion blender. Frozen peaches can be used but thaw and drain excess liquid first. Low sugar versions can substitute part of sugar with honey or maple syrup but watch cooking time due to liquid content.
