A dramatic, non-alcoholic Halloween mocktail made with spiced pomegranate juice and ginger beer. It’s sophisticated, easy to make in 10 minutes, and perfect for fall gatherings.

  • 4 cups pomegranate juice (100% juice, not a blend)
  • 2 cinnamon sticks (whole)
  • 3 whole star anise
  • 4 whole cloves
  • 1 teaspoon whole black peppercorns
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1 cup water
  • 2 cups ginger beer (not ginger ale)
  • Ice cubes
  • Fresh rosemary sprigs (for garnish)
  • Dried orange slices or star anise (for garnish, optional)
  • Pomegranate arils (for garnish, optional)

Instructions

  1. Combine the base ingredients: In a medium saucepan, add 4 cups pomegranate juice, 1 cup water, 2 cinnamon sticks, 3 star anise, 4 whole cloves, 1 teaspoon black peppercorns, and 2 tablespoons honey. Stir to dissolve the honey.
  2. Bring to a simmer: Place the saucepan over medium-high heat and bring the mixture to a gentle simmer (small bubbles around the edges). Do not let it boil vigorously. This takes about 4-5 minutes.
  3. Simmer for 10 minutes: Reduce heat to low and let it gently bubble for 10 minutes, stirring occasionally.
  4. Remove from heat and steep: Take the pan off the heat and let the spices steep for 5-10 minutes. Longer steeping gives stronger spice flavor.
  5. Strain the mixture: Place a fine-mesh strainer over a pitcher or large measuring cup. Pour the mixture through the strainer to catch the spices. Discard spices. Taste and add more honey if desired.
  6. Chill the base: Let the spiced pomegranate base cool to room temperature, then refrigerate until completely cold (about 1-2 hours, or use an ice bath for 15 minutes).
  7. Assemble the mocktails: Fill glasses with ice cubes. Pour the chilled spiced pomegranate base about two-thirds full. Top with about 1/4 cup ginger beer per glass, or to taste.
  8. Garnish and serve: Add a rosemary sprig to each glass. Optionally, add pomegranate arils, a dried orange slice, or a star anise. Serve immediately.

Notes

Make the spiced base up to 3 days ahead for better flavor. Don’t add ginger beer until serving to keep it fizzy. For a warm version, skip chilling and serve hot with a splash of ginger beer. For a spiked version, add 2 oz vodka or bourbon per serving.
