A quick and easy summer dessert featuring layers of macerated strawberries, fluffy shortcake pieces, and whipped cream served chilled in individual cups.

  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 2 cups store-bought or homemade shortcake, cut or crumbled into bite-sized pieces
  • 1 cup heavy whipping cream, cold
  • 2 tablespoons powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Macerate the strawberries by combining sliced strawberries and granulated sugar in a large bowl. Toss gently and let sit at room temperature for about 10 minutes until syrupy.
  2. Chill mixing bowl and beaters if possible. Beat cold heavy whipping cream, powdered sugar, and vanilla extract on medium-high speed until soft peaks form.
  3. Cut or crumble shortcake into bite-sized pieces.
  4. Layer parfait cups starting with about 1/4 cup shortcake pieces, then a layer of macerated strawberries with syrup, followed by about 2 tablespoons whipped cream. Repeat layers and finish with whipped cream topping. Optionally, garnish with lemon zest or a strawberry slice.
  5. Chill parfait cups in the refrigerator for at least 15 minutes before serving.

Notes

Chill bowl and beaters before whipping cream for best results. Assemble parfaits just before serving to avoid sogginess. For dairy-free, use coconut cream and vegan biscuits. Frozen strawberries can be used if thawed and drained.
