  • ¾ cup (75g) unsweetened cocoa powder, sifted (preferably Dutch-processed)
  • ½ teaspoon salt
  • 2 packets (about 14g each) Pop Rocks candy, assorted flavors

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8 inch square baking pan lightly with butter or line with parchment paper, leaving some overhang for easy lifting.
  3. In a large bowl, whisk together the melted butter and granulated sugar until combined.
  4. Add the eggs one at a time, whisking well after each addition.
  5. Stir in the vanilla extract until the mixture is glossy and thick.
  6. In a separate bowl, sift together the flour, cocoa powder, and salt.
  7. Gently fold the dry ingredients into the wet mixture using a spatula, being careful not to overmix; a few streaks are okay.
  8. Pour the batter evenly into the prepared pan, spreading to all corners.
  9. Bake for 25-30 minutes, checking doneness by inserting a toothpick near the center; it should come out with moist crumbs but not wet batter.
  10. If too gooey, bake for additional 2-3 minutes increments as needed.
  11. Cool the brownies on a wire rack for about 20 minutes to prevent Pop Rocks from melting.
  12. Just before serving, sprinkle the Pop Rocks evenly on top to activate the popping sensation.
  13. Cut into squares using a sharp knife, cleaning the blade between cuts for neat pieces, and serve immediately.

Notes

Do not add Pop Rocks before baking as they will melt. Add them only after the brownies have cooled for about 20 minutes. For dairy-free, substitute butter with coconut oil and use dairy-free cocoa powder. To reduce cakey texture, reduce flour by a tablespoon. Use Dutch-processed cocoa for best flavor. Room temperature eggs blend better. Watch oven closely to avoid burnt edges.
