  • Optional: Fresh thyme leaves

Instructions

  1. Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface into a rectangle that fits your baking sheet.
  3. Spread the brie cheese evenly over the dough, leaving a half-inch border on all sides.
  4. Spread the cranberry sauce in a thin, even layer over the cheese.
  5. Starting from the long edge, tightly roll the dough into a log, pinching the seam to seal.
  6. Wrap the log in plastic wrap and freeze for at least 30 minutes to firm up.
  7. Slice the frozen log into half-inch rounds using a sharp knife or pizza cutter.
  8. Place pinwheels cut-side up on baking sheets, leaving an inch of space between each.
  9. Brush the tops generously with the egg wash and sprinkle with optional toppings.
  10. Bake for 15-20 minutes until puffed and golden brown, rotating pans halfway through.
  11. Cool on the pan for 5 minutes before serving warm.

Keep the dough cold until baking to ensure flakiness. Use a sharp knife or pizza cutter to slice the log cleanly without squishing the layers. If using whole berry cranberry sauce, chop it finely to prevent sogginess. You can freeze unbaked pinwheels and bake straight from frozen, adding a few minutes to the cook time.
