  • ⅓ cup honey (113 grams)
  • 2 tablespoons sriracha sauce (30 ml)
  • 3 tablespoons soy sauce (45 ml), low-sodium recommended
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar (15 ml)
  • 2 tablespoons olive oil (30 ml)
  • ½ teaspoon black pepper
  • Wooden or metal skewers (soak wooden skewers in water for 30 minutes before use)

Instructions

  1. Cut the boneless, skinless chicken thighs into 1.5-inch pieces.
  2. In a large bowl, whisk together honey, sriracha, soy sauce, minced garlic, grated ginger, rice vinegar, olive oil, and black pepper until smooth.
  3. Add the chicken pieces to the marinade, stir to coat evenly, cover, and refrigerate for at least 30 minutes or up to 2 hours.
  4. If using wooden skewers, soak them in water for 30 minutes. Thread the marinated chicken onto skewers, leaving space between pieces.
  5. Preheat grill or grill pan to medium-high heat (about 400°F). Grill skewers for 4-5 minutes per side, brushing with reserved marinade or fresh honey glaze each time you flip, until charred and cooked through (internal temperature 165°F).
  6. Remove skewers and let rest for 5 minutes before serving.

Notes

Do not marinate longer than 4 hours to avoid mushy chicken. Soak wooden skewers to prevent burning. Apply glaze multiple times during grilling for a sticky, caramelized crust. Adjust sriracha for heat preference. Let chicken come to room temperature before grilling for even cooking.
