Instructions

  1. Prepare the chipotle lime butter: In a mixing bowl, combine softened butter, chipotle powder, lime juice and zest, garlic powder, salt, and black pepper. Mix until smooth and evenly flavored. If butter is too firm, soften briefly in microwave.
  2. Prep the corn: Husk the corn, remove all silk strands, rinse under cold water, and pat dry.
  3. Preheat the grill to medium-high heat (about 375°F / 190°C). For charcoal grills, wait until coals are covered with white ash.
  4. Grill the corn directly on the grill grates, turning every 3-4 minutes for about 15 minutes until kernels are tender with a golden-brown char.
  5. Transfer grilled corn to a platter and spread chipotle lime butter generously over each ear while still warm.
  6. Add optional garnishes such as crumbled Cotija cheese, chopped cilantro, or smoked paprika if desired.
  7. Serve immediately for best flavor and texture.
